Everything’s Better with … MAYO

You’ve had potato salad, egg salad and tuna salad, so why not eat them all together? I don’t know if this is really my invention, but I threw this together for dinner tonight it was so yummy and good for you.

This isn’t really a recipe per se since you can use whatever you have, but here’s my method:

1. Put a few eggs in a pot of cold water and bring to a boil. Turn heat off and let stand for 15 minutes. Remove the eggs and let cool. I used 2 eggs

2. Turn the heat back on and add potatoes to the hot water. Boil until a fork easily pierces the potatoes. I used 4-5 v. small potatoes. Throw some green beans, chopped into 1 inch pieces, into the water for a minute or two before taking every out. Run the green beans under cold water to stop the cooking and preserve the greeness

3. Cube up potatoes and eggs. Toss together in a big bowl with green beans and a drained can of tuna. I also included some diced red onion and frozen corn

4. For the dressing I used approx. 2 tablespoons lowfat vegan mayo (purchased accidentally), 1 tablespoon kewpie mayo (ahh the good stuff!), 2 tablespoons nonfat plain greek yogurt, 1/2 tablespoon dijon and a splash of red wine vinegar. S&P to taste.

5. Toss with everything else and refrigerate until chilled and ready to eat. Voila!
